Mini Quiche Recipe As Seen on RTEOne's Today Show

Using only 3 eggs was the challenge this week on RTEOne’s Today Show with Maura & Daithí. This was not a bother to ‘Irelands most versatile chef’ - Brian McDermott who already had a trick up his arm with his Baby Quiche recipe. This just so happens to be one of the recipes in Brians Award Winning book Donegal Table – which won Best Cookery Book in the World at the Gourmand World Book Awards – The ‘Oscars’ of the book world.

After been introduced as ‘The King of Donegal’ Brian got to work on his recipe with Daithí O'Sé by his side ‘cracking’ some jokes, whilst Brian ‘scrambled’ to get it finished! Haha!

The Baby Quiches are Great for breakfast or as an easy hand-held snack throughout the day. With a fast 10-minute preparation time & 15 minutes in the oven, this snack is light, wholesome and super easy to make. Have a look at the recipe below to make your own.

Hand Held Baby Quiche Recipe

Makes 12

INGREDIENTS

12 Sheets of Filo Pastry

3 Eggs

4 Rashers of Bacon (Diced & Fried)

6 Scallions (Finely Chopped)

50g Cheddar Cheese (Grated)

50ml Cream

Freshly Ground Black Pepper

Handful of Fresh Chives (Chopped)


METHOD

1. Preheat the oven to 180*C/350*F/Gas Mark. Lightly grease a 12-cup muffin tin

2. Using one sheet per cup, quickly fold the filo pastry in half and then in half again and push down into the base and sides of each muffin cup. Repeat until all 12 are lined

3. In a bowl, mix the eggs, bacon, scallions, cheese, cream, pepper and chives

4. Divide the egg mix between the muffin tin. Bake in the oven for 15-20 minutes or until golden brown. Remove to wire rack to cool.


Brian’s Tips

Keep a teacloth over the filo pastry to keep it from drying out

Substitute cheddar cheese with goats' cheese

Substitute bacon with ham & serve with a dollop of crème fraiche on top
