Brian McDermott’s Bacon & Cheese Soda Bread

In his first TV appearance of the year, chef Brian McDermott was delighted to bake his delicious Bacon & Cheese Soda Bread LIVE on the air on RTEOne’s Today Show with Maura & Daithí.

‘Soda bread is fantastic!’ said Brian who’s easy to make recipe is based on just five ingredients.

‘How you traditionally know it’s a soda bread is that it has that cross on the top of it and this soda bread baked with bacon and cheese is particularly fantastic in the morning for Breakfast!’ Brian explained.

Maura and Daithí couldn’t wait to dig into this delicious bread – served warm from the oven with real Irish butter and a good strong cup or Irish tea! What better way to enjoy this traditional bake. 

Cook this easy recipe for yourself using the method below:

Brian McDermott’s Bacon & Cheese Soda Bread


3 Rashers dry-cured bacon, finely chopped

225g self-raising flour

100g strong cheese, grated

40g butter

100ml buttermilk


  1. Preheat the oven to 190*C / 375*F / Gas Mark 5.

  1. Lightly Grease a baking tray.

  1. Fry the bacon on a dry, hot pan.

  1. Sieve the flour into a bowl and add the grated cheese and bacon.

  1. Melt the butter and add to the buttermilk. Pour into the flour mix and form a dough by gently mixing. Turn out onto a floured surface and gently shape into a round.

  1. Cut a cross on top of the bread and transfer it to the greased baking tray.

  1. Bake for 40 minutes.

  1. Allow to cool before slicing and serve with real Irish butter.

Brian’s Tips

Store in an airtight container. For a warm breakfast option, toast a slice and serve with poached eggs.
